TIMBER CREEK DISTILLERY

HISTORY IN THE MAKING

Camden Ford and Aaron Barnes founded Timber Creek Distillery in 2014 with the goal of taking locally grown grains and fruits and making interesting and authentic local spirits. The distillery is on a Family Farm just east of Crestview, Florida and includes 212 acres of Sand Pines, 100 year old Live Oak trees, and thousands of blueberry and blackberry bushes as well as a local dear, turkey, quail and the occasional rattlesnake. We buy all of our fruits, grains, and molasses from the Florida Panhandle with the exception of Barley.....it just doesn’t grow this far south. When we designed our distillery, we modeled it after a traditional Scotch distillery, after all, the Scotch have been distilling whiskey longer than anyone, so we figured they knew a thing or two about distillery design. We have quite a large range of products including Rums, Vodkas, Whiskeys, and Gins as well as some fruit Brandies. Everything is made local in our distillery in Crestview. We take great pride in milling, mashing, lautering, fermenting, and distilling each batch ourselves as well as hand bottling and labeling every bottle.

Timber Creek Distillery Owners Camden Ford

+ AARON & CAMDEN


Camden (on the right) spent most of his career out in Silicon Valley working for tech start-ups and large tech companies including HP, Brocade, Intel, Seagate to name a few. When Silicon Valley became a bit too hectic, Camden and his family moved back to Destin, Florida to slow down a bit and enjoy the slower pace of the beautiful Florida Panhandle. His dream had always been to start his own company, and after several years of research and lots of glasses of whiskey, Camden saw the growing trend of Craft Distilleries and decided to follow the old adage, "If you love what you do, you wont work a day in your life". After Camden began a little backyard Moonshine operation to see if he really could distill, he needed a taste tester. Who better than his next door neighbor who worked from home. Every day, Camden would surprise his neighbor with another mason jar of "samples" to get feedback. After a knock on the front door by some pesky agents from the Florida Department of Alcoholic Beverage and Tobacco, he thought it might be time to get "legal" and go do this thing full time. Three months later, Timber Creek Distillery was up and running making whiskey.

Aaron (on the left) received dual degrees in Finance and Real Estate Finance. While in college, in order t0 save money, he learned how to brew beer at home. For only pennies, he was able to have cold beer in the fridge all the time. Over the years, Aaron became quite good at brewing beer, but followed his training into Automotive sales and finance and eventually into Real Estate. Aaron has operated Barnes Brokerage for the last 15 years out of his house and eventually became too busy to continue his love of brewing. One day, a new neighbor moved in from California with stories of whiskey and distilling. As his neighbor kept bugging him with the mason jars of moonshine to taste, he became fascinated with distilling as well. Once his neighbor began cooking grains to make whiskey, this was right up Aaron's alley as cooking grains to make whiskey is exactly the same process as cooking grains to make beer. In fact, Scotch whiskey is made by first making beer (without the hops) and then distilling the beer in to whiskey. Aaron (on the left) broke out his old brewery equipment and the two started collaborating on homemade whiskey. As an experienced home brewer, Aaron new the importance of managing the health of the yeast in order to have optimal fermentation and flavor development. His expertise in this area is one of the key elements to the success of Timber Creek to this day. I think history will prove that beer brewers ultimately make the best whiskey because they make sure the quality of the Distillers Beer that goes into the still is of the highest quality and has the right flavor profile. As Aaron likes to say, "Put good stuff in, get good stuff out". After the brief appearance of the Florida authorities next door, Camden and Aaron decided to go into business and get licensed as a distillery. As a Real Estate Broker, Aaron had found several large properties that his family had purchased over the years that would be perfect for making whiskey. After some discussions, we were allowed to setup our distillery on his family's farm up in Crestview.....and the rest is history.
